What does an employer at a fine dining restaurant look for in a server?

looking to apply to some fancy restaurants for the summer and was wondering what sort of things I should bring to the table. I don’t have any experience but I have initiative and determination. Also, should I take a SmartServe Course? Any advice, tips, ideas are appreciated.

By the way, it is a French cuisine restaurant

    if they ask you what the difference is between an amuse bouche, an hors d’oeuvre, a canape, and an appetizer.

    the answer is
    1 bite = amuse bouche = $$$$
    2-3 bites = canape = $$$
    3-5 = hors d’oeuvres = $$
    5+ or plated = appetizer = $

    Good looks, posture and height counts a lot! In other words, you should have a good personality. One, that will blend naturally with the interior design of the restaurant, the uniform and service style.

    You should also learn how to pronounce the French Menu right, if any, and communicate, or at least understand other languages. Try to use the internet to check on service standards of most French cuisine restaurants. The course is not a requirement.

    But it helps to know the basics.

    And, please remember, you’re not just a waiter or server, you are also a seller. Your success in the restaurant depends on how much you can sell per guest or customer, per table, per day!!! The restaurant’s income at the end of the day depends on you.

    Plus, how many of your customers will go back to the restaurant? And, how many of them will look for you, or even request for you to be their waiter.

    It’s a wonderful, fun job!!! Very REWARDING!
