I love steak. I mean I really love steak. I thought I had tried steak every possible way you could cook it. That was until a friend of mine grilled me one on his cast iron chiminea. He said that the secret was to burn mesquite along with the regular fire logs that he had prepared. I tell you the flavour and smokiness it gave the steak was simply divine. I don’t think I’ve tasted anything like it. It makes me wonder what other woods are good at flavouring meat. Apparently mesquite also works well smoking brisket. I may just have to get me a cast iron chiminea and do some experimenting of my own.
