Fresh Ingredients

I am a big fan of Gordon Ramsey’s television show Kitchen Nightmares. In fact, I never miss an episode. After watching several of these shows there is one constant theme that I think needs to be addressed. Gordon always and I do mean always tells the chefs that he is trying to help that they should use fresh ingredients.

If it is prepackaged like a Medifast meal replacement meal then it is not fresh. I have seen this man instantly turn around terrible restaurants by making this one change and it can make all the difference in your kitchen as well.

Steak Mesquite anyone?

I love steak. I mean I really love steak. I thought I had tried steak every possible way you could cook it. That was until a friend of mine grilled me one on his cast iron chiminea. He said that the secret was to burn mesquite along with the regular fire logs that he had prepared. I tell you the flavour and smokiness it gave the steak was simply divine. I don’t think I’ve tasted anything like it. It makes me wonder what other woods are good at flavouring meat. Apparently mesquite also works well smoking brisket. I may just have to get me a cast iron chiminea and do some experimenting of my own.

A Home Wine Making Tip

So recently I was playing around with some of my favorite home wine making recipes and I wanted to see if I could integrate some avocado into my creations. Now this took a lot of thought on my part because an avocado is not really the type of fruit that you try to turn into wine, it doesn’t have nearly enough juice in it … it is basically all meat. So here is what I did. I took all the fruit from the avocado and turned it into a mash. I then boiled the mash on the stove with just a little bit of water to create a reduction. wine making recipes
