BISTRO COMFORT, DELICIOUS AND TASTEFUL THE BEST IN HIS WAY
how do you make meringues like they make in the bakery?
I have been trying to make meringues but they never seem to taste like the meringues that come out of the bakery. why?
Make sure you beat everything into "stiff peaks", meaning when you take the mixer out of the bowl, the mix stays in a peak (like the tip of an ice cream cone). And make sure you don’t get ANY of the egg yolk in the mix!

Do you know of any Native American Restaurants?
Have you ever eaten in or know about a restaurant serving Native American (Indian) food? If so where? Did you like it?
This information will aid me add information to the web site http://nativechefs.com. You will see there listed Native American restaurants we know about.
It will be rare to come across a Native American Restaurant. According to my Food in Non-Western class and textbook:
Sharing food is an important aspect of most Native American socieites. Food is usually offered to guests, and extra food is foten given to members of the extended family. In some nations of the Southwest, meals are prepared and eaten communally. Each woman makes a large amount of one dish and shares it with the other families, who in turn share what they have prepared. Many native Americans find the idea of "selling" food inconceivable; it is suggested that this is one reason that there are few restaurants featuring Native American specialties.
Whew. I typed that pretty quickly.

How can I tell if a restaurant or business hires illegal Mexican immigrants?
As a big opponent to illegal immigration in california I face many difficult choices every day. It is because of concerned people like me that the problem will alleviate. Illegal immigration is a immense problem in California and causes quite a backlash these days, not only from generally ‘Anglos Americans’ and other groups to latinos, but also simply from legal Mexicans who are (regrettably) looked at with increased negativity.
Many times I go to a restaurant or other business like store or carwash and I see a lot of latino (usually Mexican) workers, waiters, valet etc. I won’t mind if they are legal but I fear they are mostly not these days. How can I tell? I need to know because spending money in the wrong places and people stimulates illegal immigration.
Must I ask (and believe) the owner? Do illegals have certain tattoos (3 dots)? I saw a post saying that if you shout ICE, those who scatter are illegals. Seriously i don’t want to shout ICE in every restaurant. Any better way?
Actually you can not tell if a person is legal or not. There’s no sign on their forehead saying I’m illegal.

What do caterers provide — dishes, linens, etc?
I know this is a silly question and it will depend on each caterer, but in general, when you get a meal catered, do they provide the dishes? Glasses? Napkins?
Caterers will provide whatever you need. They will, however, charge you extra for it.

Romantic and private Chinese restaurant in Dallas?
I am looking for a chinese restaurant that offers the best and elegant setting for a date in Dallas. Any suggestions?
I highly recommend May Dragon in Addison. The food is superb, and the ambience is as good as you’ll find in any Chinese restaurant in the Dallas area.
I’ve been there many times and have never had a bad experience.

anyone know how to make cheese sauce that you get at mexican restaurant?
you know when you go to a mexican restaurant or to moes and they give you that white cheese dip thats like super delicious. does anyone know how to make that?
Queso Blanco
1/4 cup butter
1/4 cup white flour
2 cups whole milk
1 tsp. ground cumin
8 oz. canned chopped green chiles, like Chile Ortegas, drained
1/2 yellow onion, finely chopped
3 cloves garlic, minced
2 tsp. olive oil
2 fresh jalapeno peppers, seeded, deveined, and finely chopped OR 1 to 2 canned chipotle chiles chopped
8 oz. monterey jack or asadero cheese, grated
salt to taste
fresh ground pepper to taste
First saute onion in olive oil for 5 to 10 minutes over medium heat. Stir frequently to prevent burning.
Add the garlic, reduce the heat to low, and cook for 5 min. Set aside.
Have all your other ingredients ready to go. Grate that cheese, measure out that flour and butter.
Chop up those jalapeno or chipotle chiles and measure out your milk.
Having everything pre measured and ready to go into the recipe will make things much more organized and easier for you.
The first thing we are going to do is make a roux.
Grab your 2 quart sauce pan and melt the butter over very low heat. We don’t want to see a lot of bubbles going on in melting the butter. Just a gentle melting.
Once the butter is just melted, add the flour and stir with a whisk to blend it together.
Turn the heat up just a little bit so that you can see the flour/butter mixture slightly bubbling. Stir constantly for 1 minute.
Now add a little milk while continuing to stir with the whisk. Add the rest of the milk and turn the heat up to medium.
Continue to whisk for about 5 to 10 minutes. You will notice the sauce thickening.
Turn the heat down just a little and add the cumin, onion and garlic mixture, the green chiles, and the jalapeno/chipotle chiles. Stir until well mixed and hot.
Add a pinch of salt and pepper and stir.
Turn off the heat and add the grated cheese, one handful at a time.
Stir each handful in with the whisk until melted. Keep adding handfuls and stirring until all the cheese is mixed in and creamy.
Now you get to taste it. Does it need more salt? More heat? You can still stir it in at this time. Serve immediately.

Are TX restaurants responsible for providing nutritional information on their food that they serve?
What about local restaurants? Do they need to have it in the restaurant or is it ok just to have it online? If they don’t can they get in trouble?
Right now in Texas it is voluntary. A lot of places due it because of the pressure their customers put on them and if they do they put it online because you are more likely to eat the item and then look it up later.
